This smooth, modern Australian rum blends cane honey and fresh cane juice from Husk Farm Distillery. Aged in small barrels, it’s packed with notes of ripe fruit, honeysuckle, oak, and warm spice. We used it in June’s Banoffee Flip to balance out banana liqueur with richness and depth — but it’s just as good in an Old Fashioned or a simple daiquiri.

The Backbone of June’s Banoffee Flip

For June’s Elix-Elite box, we needed a rum that could hold its own alongside the indulgent White Possum Banana Liqueur — something with depth, character, and a distinctly Australian soul. That’s why we turned to Husk Rare Blend.

Crafted on the Husk Farm Distillery in northern NSW, Rare Blend is a modern Australian rum that celebrates the land it comes from. It’s made using 80% cane honey and 20% fresh cane juice, a blend that changes slightly with each harvest — but always delivers rich texture and a complex flavour journey.

This rum brings together the silky smoothness of aged cane honey with the grassy, bright vibrancy of cane juice. Aged subtropically in small barrels, it develops a warmth and spice that lingers beautifully. Think ripe fruit, vanilla, toasted oak, and oriental spices, all tied together with a soft floral lift of honeysuckle.

We used it in the Banoffee Flip to balance the sweetness of banana with depth, spice, and a dry finish. The result? A cocktail that’s luscious but never heavy..

Other ways to enjoy Husk Rare Blend:

Rum Old Fashion

  • 45ml Husk Rare Blend
  • 5ml sugar syrup
  • 2 dashes aromatic bitters
        Stir with ice and garnish with orange peel and a touch of clove.

Daiquiri

  • 50ml Husk Rare Blend
  • 25ml lime juice
  • 15ml sugar syrup
        Shake with ice and serve straight up. Add a float of smoky bitters for     depth.

Neat or on Ice
This rum is also great sipped neat. Its soft oak and fruit notes make it an easy, versatile companion — especially around dessert time.
