The floral force behind May’s “Apple of Mai Tai”
For the May Elix-Elite Cocktail Club box, we wanted to take you somewhere unexpected. A cocktail that felt tropical but local. Something vibrant, refreshing and entirely Australian. Mad Monkey Flora, a virgin cane spirit with native bush botanicals.
Crafted using vapor infusion and a foundation of virgin cane spirit, Flora captures the soul of Australia’s beauty. Each sip is a walk through meadows and gum-lined bushland. Native Thyme brings herbaceous depth, Aniseed Myrtle adds a soft, cooling spice, while Geraldton Wax and White Kunzea offer a floral brightness. And the Mountain Pepper berry? That’s where the warmth kicks in.
We used Flora to create the “Apple of Mai Tai,” a twist on the tropical classic that swaps Caribbean rum for Australian cane and layers in orchard-fresh apple with a native twist. The result? A cocktail that’s both bright and grounded — earthy, floral, and full of life.

Why We Love It
Mad Monkey isn’t just a distillery — it’s a creative playground. With Flora, they’ve bottled something truly unique: the sensory experience of an Australian summer day, wild and blooming. It’s local, it’s layered, and it makes you think differently about what cane spirit can be.
You can taste the intention behind every note, and that’s why we knew Flora needed a spotlight. If you loved it in the Mai Tai, wait until you try it in a spritz or martini.
